Am trying to remove the torx scrrews on my clutch inspection cover on
my side case, What is the best type of easy out to use that will
easily grip and remove these stripped screws?

Left hand drill bits. Start small and work your way up. Odds are
when you get to the largest bit that won't hurt the threads the
remaining part of the screw will unscrew itself as you drill.

Another alternative that I have had success with, is to cut a slot
across the head of the screw using a Dremel Moto-tool and use a
good fitting flat bit in a hand impact driver.

You can also try hammering in a suitable sized hex key bit, don't
restrict yourself to metric or SAE only.

As has already been said, left hand drill bits. If you can't get the screw out,
drill the head off but leave the shank. When you remove the cover after
drilling the heads off, you can unscrew the shank with good pliers.

A little bit of heat might also be helpful. This'd be especially true
if
the screws had been loctite'd.

Don't know the OP's location, but here in Canada, Canadian Tire sells a
nifty little 2 piece set of screw extractors (20$) that work like a charm on
Phillips head scews and bolts.
